How to collect documentation for the project?

Hello!
There is a build server in the GitLab project.
Each micro-component of the project has its own turnip. Each microcomponent has its own dock. Now this is done using Word and manual translation to pdf. Therefore, visual versioning for documentation does not work, as for text files with code.
Is it possible to write a doc in some markdown or latex, and then automatically collect pdf from it? As far as I understand, there are assemblers for regular latex or markdown, but the difficulty is that the docx document uses corporate styles for the docks. Tell me, where can I drop?
Collectors in the project are used.
