How to check iPhone for software bookmarks?

We have acute suspicions of a leak. According to some signs, we suspect an iPhone as well. Of course, we are not talking about something tricky like wiretapping the OPSOS level or installing an iron module inside.
Most likely, if there is, then this is some kind of hidden program.
Is there something like a firewall that will show which programs are knocking where? A complete list of processes and which ones are suspicious?
In specifically IOS, no one fumbles with us. At all.

Place a WiFi hotspot in front of the FW, connect your iPhone to it, and look at the FW where the iPhone goes.
In general, if the iPhone is not jailbroken, then any bookmarks are unlikely.

Hidden program? Unless it's a unlocked iPhone, it's unlikely. And again, on an unlocked device - no one will give access to data about applications other than apple software
