How to change the used network interface for a particular application/host? (Internet setup in China)

The Chinese Internet providers, whose services I have to use, carefully protect users from the harmful influence of such dangerous sites as youtube, twitter, facebook and many others. Some foreigners are even glad that less time is spent on aimless browsing. Others are trying to get around the restrictions.

One way to bypass is to connect through a foreign VPN. A good VPN allows you to download blocked foreign sites at a decent speed, but when traffic goes through a VPN, the speed of access to local Chinese sites is greatly reduced. You constantly have to turn VPN on and off depending on the site.

How to make both foreign and local sites load quickly without reconnecting?

I see two solutions:

You can let the main traffic through the VPN, while making a list of sites that will be loaded directly.

Or, a less convenient option is to send traffic from one of the browsers directly and open Chinese sites through it, and foreign sites in other browsers.

Question: how can this be implemented under Ubuntu or Windows?

You don't have to use a VPN to open blocked websites. Perhaps an anonymous proxy will suit you. Make exceptions for local sites in your browser settings. Or use two browsers, one for local resources, the other for blocked sites.

Route the Chinese subnets to one interface and the rest of the subnets to another (tunnel).
