How to change FTPs access folder?
After sudo apt-get install ssh, and a small change in the configuration file, I can connect via FTP to the server, but I can only get into the user's directory (/home/user). I need in var/www/... How can I do this?

You need to configure the DocumentRoot parameter - by default it is equal to "~", which means the home directory of the logged in user. There are many Ftp servers under ubuntu and the configuration file format is different, but the parameter is almost the same everywhere.
