How to calculate if VDS is enough?

I pay for VDS hosting, where I have one site with low traffic (200 h / s)
How to calculate if I put two sites on this hosting with traffic each approx. 3000 man/hour, will I have enough resources (hosting specifications 512MB Memory, 1 Core, 20GB SSD Disk, 1TB Transfer)

Without modeling, the load cannot be calculated.
I recommend deploying these sites on the server and going through blitz.io and loadimpact.com
You can, of course, try to use software to generate the load, for example Yandex-tank or all sorts of ab/httperf/curl-loader/jmeter/etc., but they are needed be able to properly prepare and correctly interpret the results, and this requires experience.

The number of people is not as important as the consumed cms resources. Look at the current load on those sites that you want to transfer

I think the only way is to put the resource on the server and simulate the flow of visitors with some external utility.
And the characteristics that hosters write are often abstract and incomprehensible to the hosters themselves. With the same declared characteristics, everything will fly on one hoster, and slow down on another..

The main thing is to set up monitoring to see when and why the plug starts.
