How to build a SaaS solution based on Docker and Amazon EC2 Container Service?

Some time ago, the idea of ​​a SaaS startup appeared. The software itself (prototype) was written in a couple of months on Node and Mongo.
Now I'm trying to understand how realistic it is to provide each user with their own isolated copy of the application in the container (s) + database, so that it would be possible to customize and scale it all for especially voracious users.
The idea was born to build it all on Docker containers and Amazon EC2 Container Service, i.e. when a new user registers, at least 1 container is created and deployed for him with his copy of the service application and his personal Mongo instance is created. But there are more questions than answers here.
I tried to google how other people solve similar problems, and did not find anything sensible. Please tell me where you can read / watch / listen about building such an architecture, best practices, etc., preferably in English. language.
