How to allow only one android application to run?

It is necessary that after the device boots, only a certain application is launched. Access to other android features should be restricted. Like payment terminals, etc. Is there software that allows you to do this?

Just use the dedicated apps that provide kiosk mode. For example, I used SureLock in such a situation. With proper skills, this is all, of course, removed at a time, but it is suitable for most situations.

At my previous job, they did this: the application was in startup. It was launched in full screen, the panel at the bottom was minimized. To exit the application, you need to go to the service menu (with a pin code) and exit the application there. And everything else was cleaned up, a custom launcher was installed in which there were only a couple of shortcuts and a settings button.
