Hello. I'm suffering with such a problem - I need the status "On order" instead of "Out of stock" or "In stock". I went around many forums and sites, tried many codes, not a single option is suitable. The task is simple, but difficult for me. Add "On order" stock status to WooCommerce editor (exactly like that) and make it visible in both catalog and product card, instead of another stock status if I chose it. "Out of the box" did not fit and generally works somehow crooked ... In short, hands are already falling ((

This is built into woo
Select the "manage inventory" checkbox in the product or variation
and the "allow pre-orders" field will open - set the option "Allow but notify the customer" and when the quantity is = 0 and the status "in stock" will correspond to the inscription in the product card
