How to add a product property to an order in Bitrix?

Good afternoon! There is a catalog of goods, each product has an article. When placing an order, the "order contents" include: Product ID, Name and Quantity. At the same time, the product is clickable.
Products are unique, so some of them are deactivated during the sale. New items are added daily as well. The base is growing.
We really want to start deleting products, but since the article is not saved in the order (this is necessary for the history), we cannot do this. In the component settings, only multiple properties can be passed to the cart/order. How can I make sure that after deleting a product, the order retains not only the ID and Name, but also the product SKU?

Look, I think you're thinking in the wrong direction.
Truth.
Product in Bitrix - a line in the database. Product in the cart and in the order - a link to the product line in the database. Do you want to delete a product line in the database, but at the same time keep everything in the order?
I'm not saying it's impossible. I'm saying it's pointless. Shrinking one table will bloat another, that's all. There is no less information needed for output. And it has to be stored somewhere.
What's stopping you from having too many items in your catalog? Why delete them? You can also organize, divide into sections. There are all sorts of filters and sorting...
Theoretically, you can run into hosting restrictions. But that's another question.
