How not to set the default property value for certain categories (Bitrix)?

There is a site on Bitrix Start. Elements have properties. One of the properties has a default value. Here it is necessary for a certain category not to take into account this value. So that this property would be empty in this category.
Can you tell me how this problem can be solved? Do I need to somehow influence Mysql or maybe using the internal capabilities of Bitrix?
