How does smartphone memory work?

Hello, I asked myself this question, why can't you just disassemble the smartphone and read the internal memory directly (for example, somehow connect it to a PC). Here's another example, remember when the FBI tried to hack the terrorist's iphone password? Why was it simply impossible to connect to the drive itself and read the information? In general, please tell or direct why it is impossible to disassemble the phone and get the drive and read everything from it. Thank you.

Most Android phones can do this. In the iPhone, everything is very confused and encrypted. The read ROM image is generally useless. Decryption outside the phone is impossible, without a password it is also impossible.
