How does Google automatically recognize events in emails and add them to the calendar?

I don’t know about the booking.com account, but it reads the flight number and other data from the tickets, there are always four unchanged parameters:
flight no. Dep. Arr. Date
W6 8001 VNO LTN 05. Oct 2014 06:50
All the information is there, you can find out a lot by date and flight number.

Perhaps the sites agreed with google and when sending a letter, additional data arrives and gmail converts them to the desired form

Wrote a parser, parsyat.
There is an open source - https://tech.yandex.ru/tomita/ (of course, Google did not do it on Tomita =)).
Well, ics is generally easy to parse, it is standardized.
