How do you manage Scrum tasks inside Jira?

For those in Gira, how do you organize your workflow within a single sprint using stories? In particular, you are interested in:
1. Do you create subtasks inside the history (and they are not tracked in reports) or create a separate task and make a dependency on the history (relates to)?
2. What criteria for execution time and level of detail do you apply to stories?
3. Do you add new tasks/subtasks/bugs to an already running sprint, and if so, in what situations?

1. If the story is too big, then we select it in a separate category and add tasks in this category. In small stories, respectively, create subtasks
2. The subtask execution time should not exceed 1 working day
3. Add in the case when the sprint deadline is still violated. Or we throw out some less priority task from the sprint in exchange for a new one. And so, of course, everything is determined by the level of criticality. Like, if this problem blocks, in principle, all the work in the system at all, then it is eliminated immediately.
