How do I find out what user data MY site collects?

Good afternoon. Sorry for the noob question. I am compiling a privacy policy for my site, and wondered. Personally, I didn’t set anything up, but... the theme itself (its authors), hosting provider, plugins can collect some kind of information about users and how to find out/view and clean it?
I can’t write “we don’t collect anything”, but it turns out that the topic itself puts a keylogger on the user’s PC))

Hello!
If the site does not use any forms through which the user can enter and send data to your server, then there is nothing to worry about.
Unless you need to create a notification about the use of cookies , if they are used and the site is oriented to countries from the EU.
