For example, WhatsApp or Viber, how do they interact with the server? How are new notifications checked? Sockets or what?

Sergey, the question is too general. Keeps a permanent connection to the server via sockets. There is an internal protocol by which the server and client communicate, usually TCP for text, UDP for voice and video.
