I came across such a thing as minio

I didn’t quite understand its essence, is it another kind of backup?

What is the difference from Nextcloud?

minio is a self-hosted analogue of the Amazon S3 service, compatible with it via API and is an object storage .
It is not directly related to backups, although many backup systems, often cloud ones, can use it as storage.
With Nextcloud, I can hardly think of what it looks like.
S3 is storage for services, Nextcloud is for users.
The first stores objects, the second files.
