How can I replace the certificate in someone else's apk?

Hello everyone, I'll be brief. Most of the adequate applications on android use traffic encryption and a simple proxy server cannot see it. How to get out of this situation - pull out or replace the certificate in apk, is there any good documentation on this? Preferably using instagram as an example, maybe someone has experience, just for the sake of interest.
