How can I remove video, keyboard and mouse from a server and output it directly to a laptop?

A standard type KVM is not suitable. IP kvm is expensive for a single connection. Yes, it's uncomfortable to carry. Maybe someone found something? Any Chinese "adapter" with software will do. Or not Chinese)

What type of server? Is the boot part of interest, or will the OS interface be enough?
On IBM eSerever, access to the "boot BIOS" through the client-terminal in the browser, implemented in Java, works (there are problems with versions, it was normally possible to start only on the old j1.4).
If the OS interface is sufficient, use SSH for console + VNC for graphics. It’s a little more difficult to set up full-fledged VNC Xs (for example, Xming for windows) and fully work with any X software (although this contradicts the declared “server”)
Virtual servers provide not only a full-fledged console from the moment the Linux kernel starts, but even access up to low-level debugging ( gdb kernel interfaces)
Industrial boards ( ATCA, PC104 formats) provide access to the BIOS menu through the rs232 serial port (COM) this was the case with our configuration of the server farm) and Ethernet
If you need a stupid hardware interface with a VGA grabber, you could not find it on Alibaba
