Some sites have learned to detect the presence of an ad blocker and refuse to open until the blocker is disabled. How can this be bypassed?

Option 1: Block third party/inline scripts. uBlock/uMatrix to the rescue.
Option 2: There are special lists like Adblock Warning Removal List for blockers.
Option 3: The so-called "blocking" content is nothing more than a block with z-index: 999!important, i.e. elementary removed with a pipette of any blocker.
Option 4: Play around with blocker selectors. You will be surprised how many things you can masterfully block with them.
