Do I understand correctly that you think that after the courses you will be given real tasks, constipation that will disrupt the project deadlines?
Practice means exactly real tasks in real time.
Make a portfolio or two, just adapt the design of something that already exists. Do not take Google, Facebook, etc. hackneyed. Take some kind of discord, some kind of control system, something more complicated than a landing page.
If employers see that you can really design something, and not just listen / watch courses, they will offer you an internship (of course, for free, but, as a rule, if a person copes with the first task perfectly, they take you to the lower wage bar immediately)
Those. do something yourself first, because otherwise, you will be offered only the same abstract task in a vacuum that you yourself are able to come up with (if you are not able to come up with something and do it yourself - sorry, you have no place in creative professions).
PS/ and yes, arrange a portfolio for your loved one. Your portfolio website is a practical task in itself.
