Home server software platform?

Actually a subject. Spare parts arrive tomorrow, I would like to immediately assemble the system and install something based on the following considerations:
1) Hardware: Atom D525/4Gb/2x2Tb HDD.
2) Tasks: NAS, torrent and file download, iTunes server and possibly media services, remote access via rdp / ssh, Internet distribution to other computers. You may also have to raise the "working" repositories git, maven, postgres, ms sql. IIS and .NET infrastructure may be needed, but not relevant yet.
3) Additional conditions: stable operation 24/7 with two simultaneously launched torrent clients (local network and Internet, respectively); compatibility with different platforms without particularly perverted crutches (stationary - Windows, laptop - poppy, communicator - android, UPS from Eaton, Samsung printer); above average security (there is a static external Internet IP); the opportunity to learn something new in the field of networks and setting up operational networks (I myself am a programmer, but such knowledge will not be superfluous).
In order God forbid no one thought that this topic was created to inflate another holivar / flood, I will give my own thoughts on this matter:
1) You can install Windows 7 or 2008 R2. Many questions will disappear by themselves, but given the need to install the 64-bit version, I foresee many pitfalls. The issue of security is also ambiguous - I have a licensed Kaspersky for the stationary, what to put here as protection - no idea. Well, in general, the server on Windows is somehow not quite kosher (the words of familiar admins :)).
2) You can install Ubuntu Server. It is at work, we often “communicate”, but more at the user level. Therefore, the system setup may be delayed. I'm not afraid to drown in googling mana, but I don't want to spend a lot of time either. Although, in principle, I don’t mind picking up the console :).
3) FreeNAS. A lot of functions out of the box, but in order to finish it for your requirements, you will have to steam even more than with ubuntu. For a quick start - the best option.
Just in case, I downloaded all the distros from this list). I would like to hear the opinions of those who have had a similar task, and who can share their real experience in using different platforms. Thanks in advance.

I use a powerful working machine on Windows 7 Pro x64 for similar needs - there are no problems, for more than a year 24/7 it has never fallen due to my own fault.

Thanks for the replies, I'm leaning towards ubuntu. Many things that will be needed (for example, routing, the same torrents and iTunes) can be configured with a half-kick and then not waste time on their maintenance.
