HEX traffic analysis?

What can be used to analyze traffic like viewing files through a HEX editor? I've never done anything like this, I don't even know what to call it. Those. need to catch, view and possibly change.

I understand you need a sniffer. Wireshark is a cross-platform utility (works on both Linux and Windows) traffic analyzer (sniffer). Screenshot of the network packet when viewed in HEX format.

Apparently you need a sniffer .
The task is not entirely clear. In some form, sniffers are built into many browsers, perhaps this will be enough for you. If not, Google to the rescue , I think this has all been covered more than once by more competent people in this matter.
