Has the Unity interface changed a lot since the last update?

I am new to Unity program. Trying to figure it out, I watch videos on YouTube and everyone there has an old version, while I have the latest one. I simply do not have many icons: for example, a separate tab for mountains (on the line with a brush, trees, etc.), when downloading new textures, there are no words "Edit textures" in the "Brush" tab. Maybe they are somewhere else? Tell me please.
