The /local/ folder at the root of the site (on the same level as /bitrix/) will help you. In it, you create the templates you need and other heresy. Place the bitrix folder in .gitignore. upload there. In principle, you can not push the entire Bitrix into .gitignore, but only certain parts of the directory.
