Google Chrome Apps/Extensions: Access your data across all sites. What do you really have access to?
I'm paranoid about this.
Tell me what kind of data applications / extensions with such permissions have access to? Does this mean that the application/extension will be able to get the passwords that I enter on the pages, get the content on the pages loaded via https?

When paranoid, it makes sense to study the source code of the extensions / applications used.
Google Chrome Privacy Policy document
...With better integration into the browser, installed applications and extensions can request access to components that normal web pages do not access: for example, background alerts or raw sockets . Permissions to use these add-ons may affect how data is collected and shared, as some apps and extensions log information about the sites you visit, track your online activities, and may modify them in certain ways . When you install an app or extension for the first time, Chrome will warn you about its features. We recommend that you read this warning carefully before proceeding with the installation. Please note that these third party apps and extensions and the data they collect are governed by their own privacy policies and not by Google.
