Git locally. Is it possible and how?

Hello!
Is it possible to have a plugin / utility in a development environment (for example, Geany) that works with files like git?
I do not want to manually duplicate the project files each time, for the sake of changing one file in 3 lines of code. But I would very much like to have at hand the previous version (or versions) of the project.
By local I mean work without a connection to the network.
