Git and shadow bookkeeping: how to recover data?

Well, from the category of theory. What is:
For example, there is a 1C database and git in a 1C folder.
For example, we do git commit -m "clean bookkeeping" with the clear tag.
Then, over time, we turn our dark deeds ...) That is, we make a couple more commits, for example, git commit -m "dark deeds1" and then git commit -m "dark deeds2".
And the next day, people in masks burst into the office and ask for our accounting database.
Question:
if the programmer manages to do a git reset hard clear, that is, reset the changes to a "clean" version, is it possible to restore the data?

It will be very easy to restore, you just need to look in the reflog.

It is possible, because the files, although deleted, will remain on the disk. But it will be more difficult for a forensic specialist to recover information.
