From which manufacturer to choose a processor?

I wanted to assemble a computer for myself, I already bought an msi geforce rtx 2070 super video card. I ran into a problem that the processor could not load the video card, I thought that everything would work, but I had to buy both the processor and the motherboard.
1. 3 processors in mind:
a) Ryzen 7 3700x (I don’t know which version to take, with or without a boxed cooler, reviews about the cooler vary too much)
b) Intel core i7 9700k or 9700f (Please tell me if the difference between these will be critical two?)
2. I planned to take the motherboard for AMD gigabyte b450 aorus elite, because of its characteristics.
For intel, I don’t really understand motherboards, maybe you can advise something?
I heard that amd processors are very hot and very dependent on RAM, how true is this?
The computer is assembled for games (in priority) and for work in the future, as it turns out.

And what percentage is worth?
Take intel - because optimization
I love RAM Kingston
Motherboards I have been using for a thousand years from Gigabyte, regardless of whether the percentage is chasing or not - take Z chipset (because the load calculation was for overclocking)
MSI Military is still not bad
I do NOT like asus, asrok not I tried
Cooler - only a tower, for 120 or 140mm ... for example, from inexpensive ZALMAN CNPS10X Optima
or Noctua
