Do it on Linux. Raise a samba, rummage a directory and pour backups. If there is a hardware raid, it's great, if not, and the hardware is budget, then assemble a software RAID1 (mdadm). Make a backup with the standard Windwos Server Backup out of the box, as well as SQL. Database. I would not backup entire virtual machines, only the system state and data. (This is my opinion)
If you want to play it safe, then pay attention to regular VM replication in Hyper-V.
