Exchange server: How to get analytics for a specific account?

Hello!
Got a question. How can I get statistics on individual users taken?
For example:
- the number of incoming/sent letters over a period of time
- the list of recipients, the list of people in the copy
- the number of appointments/accepted/declined meetings
, etc.
From what logs and with the help of what tools can this information be obtained?

get-mailboxserver | get-messagetrackinglog -sender [email protected] -recipient [email protected] -start "10/20/2016 2:00"

PS
Through the properties, you can collect the number of bytes sent, received. Usually the retention period for these logs is 30 days, unless changed to another value.

However, more interested in the information that is indicated in the example above.
Is it possible to collect such statistics through logs? M.b. are there any tools for parsing logs from extracting such information in a structured form?
