I found a solution to the issue! So so! I use the VS code editor and also the terminal built into it (through which I tried to launch the project with the npm start / expo start commands) and nothing worked, I decided to run VS code, and therefore its terminal on behalf of the admin (here's how to do it) and everything worked!
