Electro-mechanical TIR based on ARDUINO

I plan to make an electromechanical shooting gallery based on arduino, something like this;

Question; - what optical elements it is better to use? photoresistors, phototransistors - IR LEDs or lasers from Chinese pointers? what are the denominations? are there any ready-made schemes for connecting such optotechnics to arduino?

There is no problem to stuff a 10-ruble laser into the "rifle". The problem is to register its light. Because all sorts of photoresistors / phototransistors / photodiodes are too small. And you need at least 3 centimeters in diameter to make a "bull's heart" +, perhaps, 1-2 outer rings.
You can try to take a matte white plastic and place a light receiver behind it. By the way, it is better to look for light receivers with a built-in Schmidt and CMOS output levels: pull it up with a resistor to the power plus, and if it hits, it will sink to the ground.
In general, you will probably have more problems with the logic of this game, and not with pieces of iron.
