If you do not need to determine where the ear is in the photo, and most importantly, if the angle of the ear relative to the camera does not differ from that stored in the database, then it is obvious that the task becomes very simple - almost a pixel-by-pixel comparison and calculation of the sum of discrepancies - then the image from the database, for which this value is less, and is the desired one.
Otherwise, try first to reduce the problem to the one described above, i.e. find the ear in principle, rotate it as needed and scale it... of course, you need to take into account that the lighting can be different (work with, for example, a color derivative in the image or some other tricks).
