Dovecot does not serve mail from folders to the client. What could be the problem?
There is a mail server on iredmail 0.9.0. Respectively dovecot 2.2.9. Letters arrive in the inbox directory of users and are immediately displayed in the client (outlook, thunderbird). But if the user has other directories, to which the incoming messages get through the sieve or outlook filter, then such letters are not visible on the client until the user enters the directory. What could be the problem?

The client checks only the mail in the inbox. The sieve filter puts mail bypassing the inbox so the client doesn't see it. In TB, this is solved by setting mail.server.default.check_all_folders_for_new - in this case, TB will check mail in all folders - well, or right-click on the folder and enable the item "When new messages are received, check this folder". And the fact that letters are shown when you enter the directory is understandable - you went in and the directory was reindexed.
