Does the wordpress css file change in any way?
- for the test, I renamed the style.css of the child theme to style2.css
- wp-rocket disabled and previously cleared the cache with it
- I update in incognito with ctrl+f5
- as a result, there is a link to style.css in the html of the site and it opens
There may be others options, besides what else is some plugin doing caching?

Style.css is also in the root of the site. And your second one is custom, usually in the assets/css folder.
Which one did you rename?
Even in function.php, your css is connected; you can call it at least stylus.css, but the output will be the same as it is named in the function.
The cache is stored in the cache folder, for this you just need to check for its presence in the wp-content folder. If it is, then here is your culprit)
Ps: do not forget to backup folders and files before deleting
