I am writing something in Yandex, for example, I typed it, but did not press "search" (despite the fact that the system gave hints). Will they see it from the other side?

Yes, because in order to display hints, the system needs to perform a selection on it.
If the request was via HTTPS, then only the search engine will see it (provided that it does not cooperate with the authorities). If without HTTPS, technically all intermediaries between the computer and the destination server can see it.
