Does Bitrix have the ability to modify, if necessary, the administrative panel? For example, if you want to display a column with the sum for certain positions (not all) in the list of orders.

As far as I know, this cannot be displayed for certain positions, you can withdraw it from everyone and then if it is filled in the order card.
At the list of orders, click the settings button.

The extension of the administrative section is not available in all cases.
For example, you can develop your own pages for the admin panel and replace them with your own menu processing events. Or you can work through JS (and in some cases php) extending some pages through events like OnAdminListDisplay .
