Do sites see the device you are logging in from (say, smartphone model and operating system)? And is it possible to avoid this (so that, say, they don’t see what device I’m logging in from)?

everything is complicated,
any browser sends at least the
USERAGENT header;
as a rule, it has a browser model, an operating system model, and something else.
In addition, javascript can find out the screen resolution and a few more metrics
further if you are ordered for targeting in advertising, you will be handed over by Google and others
