Do-it-yourself on-board computer?

I wanted to have on the dashboard of my old Toyota Corsa (1991 sedan) a device that would display the information I needed.
I went shopping, climbed the sites, found a couple of almost satisfying devices on ebay, the photos of which are visible in this topic.
But still, I did not find something that would suit me completely in everything and decided to make my own.
I started to get involved in electrical circuitry quite recently, which is why I am turning to you.
The functions of the device that I need are as follows:
Clock in 24-hour format
Displays the date and day of the week
The temperature of the air outside the car, inside the car and under the hood, in Celsius.
Air humidity
Battery voltage
Gasoline consumption for the last 100 km.
Gasoline consumption at the current moment
Remaining fuel in the tank, in liters.
The remaining mileage that can be driven on the current amount of gasoline.

Look like that's it.
Tell me where should I start, what sensors are needed and most importantly, what can I pick up all this for?
Can organize on Raspbery pi?
How to display all this on the display?

Immediately I will say about the remaining fuel in liters. In the case of removing data from the lan bus of the car (or whatever you have), then there should be no problems, but in the case of connecting to a fuel sensor, it is worth considering that there are no ideal tanks.
