Dining room. ACS. open source

Hey!
I participate in the project. You have to work constantly with most of the tasks of the project, but there is one task that I didn’t even closely intersect with.
Therefore, I am asking for help.
Requires software to manage the dining room. Investors mentioned R-Keeper with the words that it is an expensive product and simpler software is needed in the canteen.
Therefore, they offer to either find a cheap solution, or write their own system. Because in the future they are taken to the state for maintenance, then they consider their own writings.
Actually, I am not familiar with systems of this kind. I can't figure out which keywords to even google for. What does this system include? The cashier clicks on the dishes on the monitor, and in the meantime everyone in the kitchen sees it and cooks / pours it on plates? Is the printing of checks also included in this system? Are there open source solutions? My head is porridge, I will be grateful for any tips.

PS I did not find a suitable hub.

1. Explore business processes
2. Build an AS-IS model, analyze it, describe the model
3. Based on the AS-IS model, build a TO-BE model (it is understood that somewhere something will change for the better, ala optimization), describe the model
4. Search, consider, offer options based on the constructed TO-BE model.
5. After the tool is found, adjust, add, implement
6. Implement in trial operation
7. Support the client for some time
Each stage must be agreed with the customer.
In my opinion, this is the direction in which we should move.

We once deployed on SambaPOS - open source, there is Russian (though clumsy, but understandable and easy to edit), since C # and normal code, the upload is written very simply, a live forum and community. If you need more details or advice, please contact. The only negative (at least for us) is that it does not connect directly to Russian cash registers and bank terminals.
In general, the standard is either R-Keeper or Frontol. At least in our region. But it is expensive and vendor-friendly, and not flexible.

If you don’t know how the business process should work, then the system will not work (I hope you understand what I mean), maybe then it’s worth hiring a consulting firm that will tell you (an audit will be carried out) and implement (if desired) or offer possible options?
