Debian 8 vs Debian 9 vs Debian 10 on a production server?

What version of Debian should I install on a production server? The choice is between 8, 9 and 10.
The machine will run nginx, mysql and php, a couple of python scripts.

Debian releases new versions so infrequently that it makes no sense to put not the latest at all.
