Creating a table of contents in MS Word with subsections?

Hello!
I am writing a large document in MS Word and am trying to make a table of contents. In general, everything is good and understandable, but there is one problem.
I want to divide the table of contents into sections (separating them with subheadings), while in the document itself there are no such subheadings in any form (and I don’t want to include them in principle, they are out of topic there). And even if they were there - I could not make Word output them without page numbers (I did not find such an option anyway).
I can add plain text to the middle of the table of contents, but the problem is that it gets wiped clean every time I rebuild the table of contents (and I have to rebuild it often because the book is in the process of being written).
I work in version 2003, but the question is more general: is it possible to get around this problem in any version of MS Word (for example, "tell" the program not to overwrite the text inserted into the table of contents manually, but leave it in place)? Or at least a way to include this text in the table of contents as higher-level headings, but not display page numbers and dot separators for them.
