That is, the user creates a store with the "test" domain and the site should be like this, test.mydomain.ru I know that openserver allows you to create subdomains, but as I understand it, you can't dynamically create subdomains, right? I mean, they don't have the ability to create a DNS record. Is it possible or are there any other options?

In order for "the user to create a store with the domain "test" and the site becomes test.mydomain.ru" you do not need to create any subdomains.
It is necessary to configure 1 time dns. After that, all possible subdomains will already be created.
It should be understood that the open server is a sandbox for completely helpless noobs, and has nothing to do with real development. Therefore, it is useless to look for some solutions specifically for this craft - they will still come in handy in real life a little less than completely.
