Cheat Engine does not display instructions accessing / writing to a specific address, why?

I use Cheat Engine. There is a Summoners War game that I run through BlueStacks. There in one of the menus there is a horizontal scroll. I found the address where the value from 0 and less is stored, changing which content is scrolled (in normal use, this is done with the mouse).
When you exit the menu and go back, the address changes and I can no longer change this value, I have to look for it again.
Therefore, I must make a pointer.
However, when I ask for the address of an instruction that accesses or writes that scroll value (to make a pointer), there are none. In the disassembler code, this address appears and disappears, and with different commands.
What is going on, does it really happen? I change the value and scrolling is done, and with the mouse I scroll, the value changes, so why are there no calls to the address? Cheat Engine not tracking everything? Or is this protection? I'm new to this (the built-in training passed), what did I do wrong?
