Specifically, the mother model ASUS PRIME H370-PLUS has two M.2 connectors and SATA RAID support. Is it possible to make RAID 1 with 2x NMVe drives on this board?

If you mean SATA and M.2 form factor SSDs, then why not. But PCI-E drives of the NVMe interface most likely will not work in RAID, since the NVMe drive has its own controller immediately built in. Unless at the software level by means of the operating system.
