Can NFC detect when a tag disappears?

I am developing a mobile application, and it is necessary that by putting the phone on the tag, it starts to perform a certain action, and when you remove it from the tag, the action would stop accordingly. Does NFC have a use case where the reader issues some command when the tag disappears? Can this be done at all?

Well, I can't say for sure. But I came across the fact that when you remove NFC (physically), the phone immediately reacts that the connection is lost (when communicating with a bank terminal, for example). Therefore, purely logically, we can assume that this is already in finished form.
I would advise you to deal with NFC technology in detail, if you need it during development and smoke all the documentation from Android ( tyts )
