Can I now work on High Sierra and will I benefit greatly in performance?

Good day. Since I want to have maximum performance, I wondered how much I would benefit from moving to an older Mac OS like High Sierra? Is everything good with software support for the front, how much faster does everything work, if it works, and what inconveniences did you encounter?

The question arose due to a rollback to Mojave from Catalina, after which the poppy earned much better. I installed Win10 via Bootcamp, on Windows some of the software works even faster than on Mojave.

I have a Macbook Pro 2015 15 at max speed, thanks for your answers!
