If it has software for tracking the phone and has not made a complete reset through the recovery, they may well be found even without police comrades. iPhone will be completely blocked.
Well, with the police, IMEI will easily be found as soon as any SIM card is inserted into the phone.
When I lost my phone, then the police shrugged and said it was my fault. At the same time, telecom operators clearly indicated that the phone was being used, but the details would not be given to mere mortals.
I understand that the police will not bother without a statement about the theft.

And so, the most common phone tracking options are IMEI, Sim card, Google service (via GPS https://myaccount.google.com/find-your-phone), well, pre-installed tracking applications. In your case, I advise you to do a full reset of the phone, and CHANGE IMEI.
And read this topic in more detail. How can I find a lost phone?
