In general, such issues are resolved very simply: register a legal entity, conclude a service agreement (or employment contract) with the developer and submit it to the NDA for signature.

I have bad news for you - anyone can steal the idea. Your developer, your partner, even your investor can leak an idea to another team if he likes it and if he sees that you are not strong enough to implement it, then he already has an experienced team and funding up his sleeve.
There is no way to protect a pure naked idea - even under US law. It is also impossible to protect the general concept, only a specific implementation is possible. That is, if all your code is stolen, the logo is replaced and put under a different name, then you can immediately go to court. And if a person simply writes his application on a similar topic, then you can’t do anything. In theory, in the US, you can play around with patents, but whether it will give you something or not is unknown. And it will definitely require money.
Regarding the NDA - it works like a scarecrow for crows. Experienced professionals do not care for him. The young may be frightened, but the young are not yet ready for independent exploits and will not steal anything from you. Moreover, many experienced programmers will simply send you with an NDA. And even if they do not send, but sign, then this paper will not be useful. If some classified information suddenly leaks, then you will first need to PROVE that it was this employee who leaked it. Even if the employee is the only one, you will have to prove that it was not you who merged it yourself in order to settle personal scores with the employee, to justify yourself to investors for failures, that you did not have viruses in your personal laptop, etc. etc. There is no way you can prove it.
Prohibit under the contract, too, will not work. A person has the basic right to make a living from his trade and sell skills as he pleases, you cannot forbid him to work somewhere where his knowledge will be in demand. This is so in Russia, there were precedents in Europe, even in the USA in many states such a scribble will be invalidated.
The only reasonable approach is to look for people with a high level of business ethics. Look at the profile of a person, study his character, think about what he is capable of and what line he will not cross. And the papers, they will not protect against anything in this situation.
