I decided to optimize the server, corrected the speed of writing to the database, switched to Opcache (by the way, I specified type=> files in .settings.php, right?), but the mail system still shows strange numbers. Where to fix?

The server has a pretty good configuration:
2xXeon 6-Core 2.40 GHz (E5645) 64Gb
DDR3 REG ECC RAM
RAID1 on SSD.

Usually mail system lags are a problem with NS. You need to look at the configuration of the MTA installed on the hosting. Usually, a simple solution is to change sendmail (which is usually the default) to postfix or exim.
